KARE-KARE Recipe Pack

Kare-Kare is a type of Filipino stew with a rich and thick peanut sauce. It is a popular dish in the Philippines served on special occasions. The traditional recipe is composed of oxtail. There are instances wherein both ox tripe and tail are used. The vegetable components of the dish are string beans, eggplant, pechay or cabbage, and banana blossoms. Lightly browned toasted ground rice is used to thicken the sauce.

    BEEF SHANK OR BULALO KARE KARE

    Ingredients:

    • 1Β cupΒ roasted peanuts
    • 15Β piecesΒ sitawΒ cut in 2-inch pieces
    • 1Β pieceΒ eggplantΒ sliced
    • 1Β bunch bokchoy or pechay
    • 1/2Β cupΒ annatto seeds
    • 8Β clovesΒ garlicΒ crushed and chopped
    • 1 1/2Β pintsΒ water
    • 2Β teaspoonsΒ cornstarch diluted in 1/4 cup water
    • ground black pepper to taste
    • 1/2Β cupΒ bagoong alamang
    • 3Β tablespoonsΒ cooking oil


    BEEF OX TRIPE KARE KARE

    Β Ingredients:
    • 2 lbs. beef tripe, sliced
    • 1 piece Knorr Beef Cube
    • 1 bunch baby bok choy
    • 15 pieces snake beans, cut into 2-inch pieces
    • 1 piece Chinese eggplant, sliced
    • 1 Β½ cup peanut, processed until smooth and creamy
    • Β½ cup annatto seeds
    • 1 piece onion, minced
    • 5 cloves garlic, minced
    • 1 Β½ tablespoon glutinous rice flour
    • 6 cups water
    • 3 tablespoons cooking oil
    • Ground black pepper and
    • shrimp paste (bagoong alamang) to taste
